Description
The substance pullulan is particularly interesting. It is a natural saccharide produced by fermentation of edible starch hydrolyzed by the fungus Aureobasidium pullulans and is readily soluble in water. It is unique for its ability to form an elastic layer.
Alginate is very well known in pharmaceuticals, and is obtained from brown algae.
Hyaluronic acid is a highly hygroscopic molecule, a popular and very effective ingredient in cosmetic products.
