Sodium citrate is the sodium salt of citric acid. It is a white crystalline powder that dissolves easily in water. Citric acid is an organic acid that occurs naturally in plants and animals, and was first isolated by chemist Carl Wilhelm Scheele in 1784 from lemon juice.
